Axel Oliva, the innovative co-founder of the Michelin-recognized San Antonio restaurant Leche de Tigre Cebicheria Peruana, passed away on March 29, 2026, at the age of 31. His sudden death has left a profound void in the culinary community, among friends, family, and the many patrons whose lives he touched with his passion for food and hospitality.

Born in Laredo, Texas, Axel and his brothers Emil and Alec spent a portion of their childhood in Peru, where they developed a deep appreciation for the rich flavors and cultural diversity of Peruvian cuisine, including its Japanese and Chinese influences. This formative experience shaped Axel’s vision and inspired him to create a restaurant that would not only serve exquisite dishes but also foster genuine human connection.

In 2023, Axel and his brothers opened Leche de Tigre in San Antonio’s Southtown neighborhood. From the beginning, Axel played a vital role in the restaurant’s success, managing front-of-house operations during service while coordinating behind the scenes to ensure the daily workings of the restaurant ran smoothly. His dedication and leadership were instrumental in earning Leche de Tigre a “recommended” status when the Michelin Guide launched in Texas in 2024—a designation the restaurant proudly retained in 2025. Under his guidance, the restaurant also received accolades from San Antonio magazine as one of the Best New Restaurants and was ranked No. 7 in the Express-News’ Top 50 San Antonio restaurants.

Axel’s colleagues and peers remember him as a generous, warm, and talented individual. Messages of condolences poured in following the news of his passing, reflecting the high regard in which he was held. “What a great heart we have all lost in Axel,” wrote Jorge Hernandez, corporate chef at Pullman Market. “It was a true honor to know him.” Chef Alexana Cabrera Davis expressed in Spanish, “Lamento profundamente su pérdida… Están en mis pensamientos y oraciones durante este momento difícil,” emphasizing the depth of respect Axel commanded in the culinary community.

Beyond his professional achievements, Axel was a devoted brother, a loving family member, and a friend to many. He believed in the power of food to connect people, once telling the Express-News, “We do this for the love of our craft, but mostly to connect with people. Pure, genuine human connection.”

A public memorial service for Axel Oliva will be held Thursday, April 2, at 5 p.m. at Porter Loring Mortuary, 1101 McCullough Ave., San Antonio. The restaurant and family have requested privacy as they grieve this heartbreaking loss. Axel Oliva’s life, though tragically short, left an enduring mark on the culinary world and the hearts of all who had the privilege of knowing him.
